Primary processing step by step

  1. Receive & sort fast. Leaves must arrive within hours of cutting. Reject bruised, spotted or fermented leaf β€” one bad leaf taints a batch.
  2. Wash. Potable water, ideally with a brief food-grade sanitizer rinse; drain well.
  3. Trim. Remove spiny margins and the leaf base; some protocols also rest leaves vertically to drain the bitter yellow latex (aloin) before filleting β€” essential for drink-grade gel.
  4. Fillet the gel.
    • Hand filleting: a skilled worker slices the rind off and collects the clear inner gel β€” slow but needs no equipment.
    • Machine lines: leaf washers, slicers and gel extractors produce whole-leaf or filleted gel at scale.
  5. Grind & homogenise the gel; optionally de-pulp for a clear juice.
  6. Stabilise. Raw gel browns and spoils within hours. Common approaches: acidification (citric acid, vitamin C), pasteurisation, and immediate cold chain (refrigeration/freezing). Commercial stabilisation follows validated, buyer-specified protocols.
  7. Test, pack, chill. pH, brix/solids, microbial counts; food-grade drums or pouches; cold chain to the buyer.
Food safety is the whole business Untreated fresh gel is a perishable food. Cutting corners on hygiene, cold chain or aloin limits is how small aloe businesses die β€” either from spoiled batches or failed buyer audits. Follow a tested protocol and local food law, not internet recipes.
